Crispy Baked Accordion Potatoes (Viral TikToc Recipe)

Move over French Fries. This new accordion potato skewers recipe is the new TikTok craze that will tantalize your taste buds. This is a most delicious recipe – and a great side dish – that results in some fancy-looking potatoes.

Think crispy potatoes, golden brown and morphed into this crunchy accordion potato recipe, similar to hasselback potatoes, only better, and the perfect choice for the avid potato lover. Every potato slice artfully chiseled into an accordion shape, then delicately brushed with vegan butter, garlic and fresh herbs yielding a crispy outer layer that’s light and fluffy on the inside. 

🥔 Ingredients (With Substitutions)

  • Potatoes – preferably Yukon Gold but you can also use Russet Potatoes or sweet potatoes. You’ll  want to use 4 large potatoes for this recipe. Speaking of sweet potatoes, try my Air Fryer Sweet Potato Fries.
  • Vegan Butter – melted butter, vegan style, is how we roll on this one. You can also use olive oil. 
  • Garlic – fresh minced is best, but you can substitute with garlic powder if you’re out of fresh.
  • Thyme – dried works best, however you can substitute with other favorite dried herbs, such as basil or rosemary.
  • Oregano – adds a peppery aroma and flavor to the taters. Alternatively, you could substitute with basil, but I recommend using it to bring out the full flavor.
  • Flakey Sea Salt – I love using large salt flakes for this recipe, not only for the taste, but it also makes them look prettier for serving. If you don’t have this type on hand, regular sea salt will work just fine.
  • Pepper – black pepper gives a kick of earthy heat to the potatoes. You can substitute with white pepper, however, if you prefer.
  • Fresh parsley – you can substitute with cilantro or another favorite herb.

📖 How to Make An Accordion Potato

Before you begin preparing these potatoes on a stick, preheat your oven to 400F/204C. Line a baking sheet with parchment paper.

Step 1: using a cutting board and sharp knife or vegetable peeler, peel the potatoes. Then, cut each round end off.

Step 2: after squaring off the ends of the potato, cut the rest of it into 1 centimeter or 0.4 inch slices. Repeat with each remaining potato.

Step 3: lay the potato slice down between 2 wooden skewers (the skewers prevent your knife from cutting all the way through the potatoes).

Step 4: cut narrow lines into the potato, going perpendicular (opposite) to the skewers. This is what your potato should look like after when you fan out the potato.

Step 5: flip the potato over, continuing to use the wooden skewers, and cut diagonal cuts.

Step 7: gently skewer the potato and spread the accordion potato out. The best way to do this recipe is to place the skewered potato in a bowl of cold water while you skewer the remaining potatoes.

Step 8: soak the potato skewers for 30 minutes or overnight. This prevents them from browning and will remove some of the starch from the potatoes making them turn out ultra-crispy.

Step 9: make the herbed garlic butter by melting the vegan butter in a small bowl. Add the oregano, thyme, sea salt, fresh garlic and black pepper. Stir with a fork or whisk to combine.

Step 10: finally, place the hasselback waffle potatoes on a baking tray lined with parchment paper. Brush each side of the potato with the herbed garlic butter mixture. Bake in the pre-heated oven, flipping halfway through, for 30-40 minutes, or until golden-brown and crisp. Cooking time may vary, depending upon your oven. Remove from oven. Place on platter lined with a paper towel. Garnish with your favorite toppings and dipping sauce (suggestions to follow).

  • The potato slices must be thick enough to be skewered without breaking, however, not so thick that they’ll break when skewering them.
  • For best results, choose large, elongated potatoes for this recipe instead of short, round or irregularly-shaped ones.

📋 How to Make This Recipe in the Air Fryer

To cook this accordion potatoes recipe in the air fryer, follow steps 1 through 9 above to prepare them. When you’re ready to cook them, place skewers in a single layer in your air fryer and cook at 375F/191C for approximately 15 minutes, gently turning half way through. Repeat until all the potato skewers are done

Can I make Accordion Potatoes ahead of time?

Yes, you sure can. Follow steps 1 through 8 above and, after placing them in a bowl of water, cover and put them in the refrigerator. They can remain in the fridge in the water for up to 3 days.

🌡️ Storage, Freezing and Reheating Instructions

Leftover potatoes, if there is such a thing, can be stored in an airtight container in your refrigerator for up to 5 days.

You can also freeze an accordion potato by wrapping each in plastic wrap, placing in an airtight container and putting them in your freezer for up to 3 months.

To reheat, remove from freezer and allow to thaw at room temperature. You can reheat in the oven or air fryer, or deep fry, whichever you prefer.
