Red Fruit Salad

Ingredients for Red Fruit Salad with Substitutions

- Red Berries – I used strawberries and raspberries. You can also add pitted cherries or other red fruit of your choosing.
- Watermelon – seedless works best for this recipe.
- Agave – you can substitute with maple syrup or add a little brown sugar.
- Fresh Mint – you can substitute with fresh basil or other fresh herbs or simply add other herbs in with the mint.
- Lime Juice & Zest – you can substitute with lemon juice and lemon zest if you prefer.
- Strawberry or Raspberry Preserves – enhances the flavor of the fruit.
- Dollop of Yogurt – this is optional, but a dollop of dairy-free yogurt would be a great way to add more creamy flavor to this beautiful salad.
How to Make a Red Fruit Salad

Step 1: Place prepared watermelon, strawberries and raspberries in a large bowl.

Step 2: In another bowl, add lime juice, preserves, agave, half the lime zest and half the mint.

Step 3: Whisk all ingredients together until well-blended.

Step 4: Pour mixture over fruit. Gently toss fruit with dressing until fruit is evenly coated. Spoon fruit salad onto a large serving platter. Sprinkle with remaining lime zest (optional) and chopped mint. Pair with my vegan garlic bread or focaccia bread . and my Tinto de Verano, a Spanish red wine cocktail that’s out of this world. Enjoy!

Tips for the Best Looking Red Salad Ever
- For the most appealing salad, you’ll want to choose fresh, ripe seasonal fruit with no brown marks, mold or bruising. Look carefully at the container of berries you purchase, as sometimes the bottom ones can tend to get mushy and moldy.
- Like I did with my Roasted Bell Pepper Salad, layer your salad carefully for the prettiest presentation. For the top layer, place some berries face up and some face down.
- Sprinkle finely chopped mint sparingly so as not to overwhelm the look of the salad. Finish with a single sprig of mint in the center.

Storage
This red fruit salad is best served immediately after preparation. However; if there are leftovers, store them in an airtight container in your refrigerator for up to 3 days.
This festive fruit salad doesn’t freeze well, so I don’t recommend freezing for this recipe.

- 2 tbsp fruit preserves strawberry or raspberry
- 1 tbsp agave or maple syrup; divided
- 1 tbsp fresh mint sliced thin; divided

I have never had a fruit salad quite like this..I typically make mine by just throwing some fruit in a bowl. This salad literally blew my mind! I will never make fruit salad any other way again!
