This little “party in a glass” combines fresh apple cider and a sparkling bottle of champagne with hints of cinnamon and rosemary (and a fresh slice of apple) to make it much more flavorful than a regular mimosa. You can drink it as it’s made, or add some caramel vodka or cinnamon whisky to make it your own. Guaranteed to “apple-solutely” be one of the best champagne cocktail recipes ever. 

🍎 Ingredient List for Apple Cider Mimosas (With Substitutions)

  • Champagne – the kind of champagne you use is up to your preference, but keep in mind not all champagne is vegan. Not a champagne fan, you can substitute with sparkling wine. 
  • Apple Cider – For this particular apple cider cocktail, I chose sparkling apple cider. However, your own homemade apple cider or store-bought apple cider will also be delicious.  
  • Garnishes – (optional) for the perfect fall twist, garnish each glass with cinnamon sticks, rosemary sprigs and thin apple slices. 

🍾 How To Make An Apple Cider Mimosa

1. Pour your favorite champagne into champagne flutes.

2. Follow with regular or sparkling apple cider.

3. Garnish with a cinnamon stick, rosemary sprig and slice of apple. Serve immediately. Enjoy!

  • Keep in mind that using regular apple cider instead of sparkling apple cider will result in a darker apple cider mimosa than what is pictured and a little less bubbly.
  • For best results, prepare and serve immediately. Waiting to serve will cause the mimosa to go flat before serving to guests.
  • If you prefer a stronger apple cider taste, simply swap an ounce of champagne for another ounce of apple cider. Alternatively, if you would like a stronger mimosa, swap an ounce of apple cider for another ounce of champagne.

🥂 How To Decorate The Edge of the Glass

To make even more festive cocktails, you can add adornments to the rim of the glass. For example. to make a cinnamon sugar rim:

  • Mix together a tablespoon of cinnamon and a tablespoon of organic sugar and add to a small bowl or plate.
  • Moisten the rim of the glass with some lemon juice from a slice of lemon.
  • Dip the rim of glass into the cinnamon sugar. Then prepare as per the steps above.
  • Instead of cinnamon and sugar, you can follow the same procedure using gold and silver edible sparkles or brown sugar. 

🥃 How To Make Caramel Apple Cider Mimosas

Make it a caramel apple cider mimosa by adding an ounce of caramel vodka to each glass. In addition, a personal favorite of mine: drizzle a dollop of caramel sauce into the glass before adding all the ingredients. This makes it the perfect drink for special occasions like Sunday brunch, Thanksgiving dinner or Christmas morning.

💭 Frequently Asked Questions

Is all champagne vegan?

No. Although there are many vegan friendly brands of champagne, some use animal by-products. To find out which champagne brands are vegan friendly, check out the Barnivore Vegan Alcohol Directory.

What’s the best champagne to use for an apple cider mimosa?

It depends on your preference. If you like your mimosas on the sweeter side, choose a champagne labeled as “dry” or “very dry”. These will be slightly sweeter than a champagne labeled as “brut” which is not sweet at all. You can also choose Prosecco, a variety of sparkling wine made in Italy.

Can I use apple juice instead of apple cider?

I strongly recommend using apple cider instead of apple juice in this mimosa recipe. Making apple cider involves harvesting the apples, cleaning and preparing them to be ground into a pulp (pomace), and then pressing the pomace to extract the juice whilst leaving some of the pulp and sediment to escape filtration, thus making it’s way into the juice. This creates a darker, cloudier, pulpier version of apple juice that tastes far superior to it’s apple juice counterpart and has tremendous health benefits. Of course, if all you have is apple juice, then by all means, go for it.

Can I make this ahead of time?

For best results, mimosa’s should be served immediately after preparation so all those fizzy bubbles from the champagne don’t go flat and ruin this otherwise marvelous fall brunch cocktail.
