Vegan soup is such a delight to eat, isn't it? It's delicious and versatile, nutrient-dense, low in fat and calories and high in fiber. Not only is it a powerful vessel for vegetables, during the cooking process it releases such a lovely, inviting aroma into your home, you can almost float on the scent.
It's easy to freeze and reheat; you can make a huge pot of it and have it for dinner for weeks to follow.
