Vegan Chocolate Chip Cookie Dough Bites | No-Bake

These vegan cookie dough bites are full of decadent, yet guilt-free goodness, as they are vegan and refined sugar-free.  You can also make them gluten-free by using gluten-free flour. Made with only 8 ingredients in one bowl, this vegan chocolate chip cookie dough recipe takes only 5 minutes to prepare. 

Who doesn’t love vegan cookie dough, especially when it is bursting with sweet vegan chocolate chips? I remember as a kid, my mother forbade us to eat cookie dough. However; that didn’t stop me from sneaking some out of the bowl when she wasn’t looking. And what a delight it was…until she caught me and I got a whipping for being a cookie dough thief.

I never understood why my mother wouldn’t let us eat it until I got older and figured out that eggs and milk can go bad and make the raw cookie dough dangerous to eat. But guess what, hungry friends, you don’t have to worry about that anymore as this recipe is full of nutritious ingredients that won’t make you sick when you eat it raw. Yay team!

What You’ll Need

Ingredient Notes and Substitutions

flour – I use organic all purpose flour for this recipe. However; if you are gluten-intolerant, you can substitute with gluten-free flour.

vegan chocolate chips – these are sometimes difficult to find. I love Enjoy Life Vegan Chocolate Chips, but many stores don’t carry them. almond milk – can be replaced with the plant milk of your choice. I have a new passion, which is oat milk, which really compliments this recipe just as beautifully as the almond milk. If you haven’t tried it yet, I highly recommend oat milk. Why? Not only because it’s damn delicious (and this is coming from a former milk-addict), but but because bees aren’t required to pollinate any flowers during the processing.

sugar in the raw – can be replaced with any vegan sugar, however; keep in mind that regular white sugar is not vegan, as manufacturers use bone char during the processing. How to Make This Recipe

1. To a medium bowl, add all purpose flour or gluten-free flour.

2. Add vegan butter.

3. Using hand mixer, beat on low until well-incorporated.

4. Add organic brown sugar.

5. Add Sugar in the Raw.

6. Add vanilla.

7 – Add sea salt.

8 – Add chocolate chips.

9 – Using hand mixer, beat on low until thoroughly combined.

10 – Pour in almond milk while continuing to beat the mixture.

11 – Form your dough into a large mound while still in bowl. Remove an oversized tablespoon of dough and roll it into a ball.

12 – Place each ball onto a cookie sheet lined with parchment paper.

13 – Refrigerate for 20 minutes.

Expert Tips

  • Although you can eat these right out of the bowl, it’s best to refrigerate them for at least 20 minutes to allow them to set. 30 minutes to 1 hour is optimal.
  • Alternatively, if you don’t have a hand mixer, you can use a fork to stir.
  • Your cookie dough bites can be rolled into a smooth or rough-looking ball as pictured. It makes no difference in the taste.
  • Store prepared cookie dough in an airtight container for up to 7 days.
  • Freeze leftovers by wrapping in plastic wrap or a storage product of your choice. Securely packaged, cookie dough will last for up to 60 days in the freezer.

Yes, indeed you can. When making a double batch, cut the prepared dough in half, wrap the half you want to store in plastic wrap and store in freezer for up to 60 days. Once you’re ready to prepare the balls, remove dough from freezer and allow to defrost at room temperature for 4-6 hours before rolling the dough into balls to be eaten.

Equipment

Ingredients

  • 2 cups flour I used all purpose white; use gluten-free flour if intolerant to gluten
  • 1/2 cup softened vegan butter I used Earth Balance
  • 1/2 cup packed organic light brown sugar
  • 1/2 cup sugar in the raw or any vegan sugar
  • 1/2 cup unsweetened almond milk or any plant-based milk
  • 3/4 cup vegan chocolate chips non-dairy
  • 2 tsp vanilla extract
  • 1/2 tsp fine sea salt

Instructions

  • Add flour and Vegan butter to mixing bowl. .
  • Using a stand or hand mixer, beat for 2 minutes until the butter is well distributed in the flour.
  • Add the sugars, vanilla, chocolate chips and sea salt.
  • Continue beating while folding in the almond milk a little at a time. Use a spatula to scrape the sides.
  • Line a baking sheet with parchment paper. Spoon out about a tablespoon for each bite and roll into a ball. .
  • Place on baking sheet and refrigerate for at least 20 minutes before serving. Should make 16 bites per batch
