- 2 large sweet onions vidalia, Mayan or yellow onions work best
- 8 tbsp vegan butter softened at room temperature
- 2 tbsp olive brine preferably from green olives
- 1 tbsp olive oil
- 1.5 tsp smoked paprika
- 1 tsp red pepper flakes
- 1 tsp garlic powder
- 1/2 tsp sea salt
- 2 tsp maple syrup
- 2 tbsp nutritional yeast
- 1-2 tsp Louisiana Hot Sauce any hot sauce will work
- 1/2 tsp freshly cracked black pepper
- fresh dill and/or parsley
Before you begin, preheat your oven to 400F/204C.
Start by trimming both ends of the onion and removing the outer skin.
Using a small knife, cut a deep cone into the center of the onion to create a cavity for the seasoning mixture.
Next, add vegan butter, olive brine, olive oil, smoked paprika, chili flakes, garlic powder, and maple syrup to a medium bowl.
Using a fork, mix until you reach a smooth consistency.
Spoon the mixture into the center of each onion.
Then, rub the remaining butter mixture over the outside of each onion.
Wrap onions tightly in foil.
Finally, place onions in a baking dish. Bake for 50-65 minutes until the onion is extremely tender and the layers pull apart easily with a fork. Remove from oven and carefully open the foil being careful of the steam. Place each onion in a bowl and pour juices from the foil packet over them. Sprinkle with fresh dill and chopped parsley and serve with crusty bread or rice.
