Healing Turmeric Cauliflower Rice Bowl

Ingredients

  • 1 whole cauliflower broken into florets and roasted
  • 2 teaspoon ground turmeric
  • 4 cloves garlic
  • 20 cherry tomatoes chopped in half
  • 1 avocado chopped
  • 2 carrots peeled with vegetable peeler
  • 2 cups spinach rinsed, patted dry and packed
  • 4 green onions chopped
  • ½ cup pomegranate seeds for garnish
  • ½ tsp sea salt
  • ½ teaspoon black pepper

Instructions

  • Add cauliflower florets, garlic, turmeric, sea salt and pepper to food processor. Pulse just until the florets are coarsely chopped. Use spatula to scrape sides. Avoid over-processing as your cauliflower will turn to mush.
  • Line two large bowls with spinach leaves. Top spinach leaves with cauliflower rice and rest of vegetables. Serve immediately with your favorite dressing and some warm, crusty bread.
