Easy No-Bake Vegan Cookie Dough Bites (GF Option)

These easy vegan cookie dough bites are loaded with chocolate chips and can easily be made gluten-free. Require only 8 ingredients and 5 minutes to prepare.

Ingredients

  • 2 cups flour I used all purpose white; use gluten-free flour if intolerant to gluten
  • ½ cup softened vegan butter I used Earth Balance
  • ½ cup packed organic light brown sugar
  • ½ cup sugar in the raw or any vegan sugar
  • ½ cup unsweetened almond milk or any plant-based milk
  • ¾ cup vegan chocolate chips non-dairy
  • 2 teaspoon vanilla extract
  • ½ teaspoon fine sea salt

Instructions

  • Add flour and Vegan butter to mixing bowl. .
  • Using a stand or hand mixer, beat for 2 minutes until the butter is well distributed in the flour.
  • Add the sugars, vanilla, chocolate chips and sea salt.
  • Continue beating while folding in the almond milk a little at a time. Use a spatula to scrape the sides.
  • Line a baking sheet with parchment paper. Spoon out about a tablespoon for each bite and roll into a ball. .
  • Place on baking sheet and refrigerate for at least 20 minutes before serving. Should make 16 bites per batch

Notes

  • Although you can eat these right out of the bowl, it's best to refrigerate them for at least 20 minutes to allow them to set. 30 minutes to 1 hour is optimal.
  • If you don't have a hand mixer, you can simply use a fork to stir.
  • Your cookie dough bites can be rolled into a smooth or rough-looking ball as pictured. It makes no difference in the taste.
  • Store prepared cookie dough in an airtight container for up to 7 days.
  • Freeze leftovers by wrapping in plastic wrap or a storage product of your choice. Securely packaged, cookie dough will last for up to 60 days in the freezer.
