Vegan Tomato Soup Recipe

This Vegan tomato soup is made with canned tomatoes and is the perfect weeknight dinner.

In a large pot or Dutch oven over low to medium heat, sauté the onions, carrots, and garlic in olive oil following the instructions. Then add in your basil, tomatoes, vegetable broth and red pepper flakes. Cook per the instructions.

Blend all your ingredients together. Then you will want to add back to your pot and add your coconut milk,  sea salt and pepper.  Serve with your favorite grilled cheese sandwich.
