VEGAN MASCARPONE CHEESE

Shop for the following 6 ingredients. You may already have some of them on hand.

Place all ingredients, including pre-soaked cashews, maple syrup, lemon juice, vanilla extract, sea salt and the top part of a can of coconut milk into a food processor or high speed blender.

Pulse or blend on high speed for 2-3 minutes, or until vegan mascarpone is smooth and creamy.

Scoop into a bowl and chill for 2-3 hours prior to serving with your favorite fresh fruit or on your toasted bagel.
