Dairy-Free Mashed Potatoes 

This mashed potato recipe uses only 3 ingredients, including potato water that makes the creamiest mashed potatoes. 

Wash, peel and slice the potatoes. Boil them in a pot until fork-tender, about 10-12 minutes. Reserve about 1-1 1/2 cups potato water.

Drain the potatoes using a colander. Place them back in the pot and add vegan butter, sea salt and reserved potato water, a little at a time.

Use an immersion blender or potato masher, mash potatoes until smooth & creamy. Add a little more potato water for a creamier consistency.

Top with a few more dollops of vegan butter and finely chopped parsley. Serve piping hot and enjoy.
