Stop by the store if you don't already have these few simple ingredients. You may have to let the bananas sit for a couple days so they get over-ripened.

Once the bananas are nice & brown, wash them then remove peels in 1-inch strips. Scrape the pulp from the skin with a large spoon.

Place the peels in a large dish. Make th e marinade and pour it over the banana peels making sure they are well-submerged in the sauce.

Heat some olive oil in a pan and fry the banana peels over medium heat. Sprinkle a little coconut sugar over them being careful not to burn them.

Remove the peels from the heat and place on a parchment-lined baking sheet. Gently blot each peel with a clean paper towel. Serve with some vegan blueberry muffins and a JUST Egg Frittata.
